Fast and Easy GF- and the staples in our house

You've worked all day.  Or you have ran the kids around to practice, appointments, therapy, playdates...what's for dinner??  Here are a few go-to GF meals that we turn to in desperation. :)

Chicken Fajitas (in the slow cooker)- thanks to Kim for this recipe that we use all the time!
1 bag frozen peppers (SuperTarget has yummy grilled ones)
1 jar of On the Border Salsa
3 chicken breasts

Place chicken on the bottom of the crockpot, followed by peppers, and then salsa.  Cook on low 8 hours and then shred the chicken.  Serve with tortillas and all the fixings!

Tacos/Sloppy Joes
The McCormick taco seasoning and sloppy joe mix are gluten free, as well as the ortega shells (also soy free).  Udi's makes a new hotdog bun that we put the sloppy joes on that tastes great.

Mozzarella- Stuffed Turkey Meatloaf
I think I found this in Shape magazine several years ago- but even Hunter will eat it. Spinach and all.
1 lb ground turkey
1 10-oz package of chopped spinach (we use about half)
1/2 c minced onion
1/2 c seasoned dry GF breadcrumbs
1/4 c chopped fresh parsley
1 tsp dried oregano
2 egg whites
1/2 tsp salt
1/4 tsp ground pepper
4 oz mozz cheese (1 cup)

In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and pepper.  Mix well with wooden spoon.
Press 1/2 of mixture into an 8 in loaf pan.  Top bottom with mozz cheese.  Press remaining turkey mixture on top and flatten to make an even layer.  Whisk together 2 T ketchup and 2T mustard and spread on top.  Bake 1 hour, let stand 10 min. 

Other staples in our freezer/pantry (not including the fruits and veggies we buy and cut up on Sundays):
Udi's bread- we have tried them all and this is the closest to real bread.  Sometimes on sale at Sprouts.
Ian's fish sticks, chicken nuggets, even turkey corn dogs.  Taste great- better than the other brands.
Calbee Snapea Crisps- Hunter loves anything crunchy- so I'll sneak some veggies here.

Puffins- honey rice are gluten free. However, they do contain vitamin E, which is derived from soy
Alexa french fries- all types gluten free.  Also found that the Orida sweet potato fries are GF, too.
Van's waffles and french toast sticks- don't buy the french toast sticks too often, but save for a treat.
O Organics microwave popcorn (at Tom Thumb)- all natural ingredients
Sunbutter and natural/organic jelly- I just try and find one (on sale) that doesn't have sugar listed as the first ingredient. We really like the Sprouts brand.
Black beans, pinto beans, garbanzo beans...we have them all.  Need those legumes!

Bob's Red Mill GF flour
Quinoa pasta- we think the veggie curls and spirals are the best- these noodles taste and cook up so much better than rice pasta
Yogurt: We tend to get the Stonyfield Farms brand, but the yoplait Dora and Lightning yogurt do not have high fructose corn syrup and no artificial colors or flavors.

A trick to get the kids to drink more water is to give them a "splash."  We pour a cup 3/4 full of water and add a splash of Simply Lemonade.  It has the least amount of sugar and my kids love getting their "juice."

The key to my grocery shopping is not to buy anything with more than a few ingredients.  If it takes me more than a glance to see the list, it goes back on the shelf.
